<p>One of my most liked thai dishes is Chicken Curry.  The first time I made it I enjoyed it so much that I made it a second time.  Cooking time was about 30 minutes.</p>



<p>Ingredients:</p>



<ul class="wp-block-list">
<li>Chicken &#8211; Skinless, boneless, and cut into cubed bite size</li>



<li>Olive Oil </li>



<li>Curry Powder</li>



<li>Garlic</li>



<li>Onion &#8211; </li>



<li>Coconut Milk &#8211; 1 Can </li>



<li>Tomatoes</li>



<li>Salt</li>



<li>Pepper</li>



<li>Sugar</li>



<li>Chicken Broth &#8211; Recommend using low sodium</li>
</ul>



<p>Instructions</p>



<p>In a large skillet begin by heating olive oil.  Add chicken and season with salt and pepper.  Cook for about 5 minutes until the chicken is no longer pink.</p>



<p>Add the onion, garlic, curry powder, and stir for 2 minutes.  Add the chicken broth, coconut milk, tomato past, tomatoes, and sugar.  Stir until everything is brought to a boil and then cover with a lid.  Reduce head and simmer for 15 to 20 minutes.</p>



<p>Serve with parsley or with steam jasmine rice.</p>
