Chicken curry

One of my most liked thai dishes is Chicken Curry. The first time I made it I enjoyed it so much that I made it a second time. Cooking time was about 30 minutes.

Ingredients:

  • Chicken – Skinless, boneless, and cut into cubed bite size
  • Olive Oil
  • Curry Powder
  • Garlic
  • Onion –
  • Coconut Milk – 1 Can
  • Tomatoes
  • Salt
  • Pepper
  • Sugar
  • Chicken Broth – Recommend using low sodium

Instructions

In a large skillet begin by heating olive oil. Add chicken and season with salt and pepper. Cook for about 5 minutes until the chicken is no longer pink.

Add the onion, garlic, curry powder, and stir for 2 minutes. Add the chicken broth, coconut milk, tomato past, tomatoes, and sugar. Stir until everything is brought to a boil and then cover with a lid. Reduce head and simmer for 15 to 20 minutes.

Serve with parsley or with steam jasmine rice.
